The powder itself has a fresh, deep green color, which changes to a dark emerald color when mixed with water. The taste of Premium is really delicate, which means, among other things, that you can enjoy it in its pure form and without sweetening.
Like Bio Matcha Tea Harmony, it is grown in Aichi Prefecture, where the cultivation of the Camellia sinensis tea plant is carried out in the traditional way - the entire plantation is covered for weeks before harvesting so that a minimum of light penetrates the leaves. This will sharply increase the production of chlorophyll and give the plant its deep green color. Since the leaves for Matcha Tea Premium are mainly collected at a very early stage of growth, the human eye is needed to select them. Tea leaves for Premium are collected exclusively by hand. The processing is also more difficult - after drying, only the greenest leaves of the tea plant are crushed into a smooth powder between two granite stones, a recipe that is more than eight hundred years old. This procedure is time-consuming and cannot be rushed. To ensure that the tea retains all its nutrients and does not lose its delicate flavor, it takes an hour to grind thirty grams of this unique green tea. The result is a bright green, velvety-fine powder, with an even more delicate taste and an even higher proportion of caffeine and amino acids.
